Our sausage traybake is a simple and flavourful dish that is made by baking Richmonds Meat-Free Tasty Sausages and vegetables together in a single pan. It is a convenient and easy meal to prepare, as it requires minimal prep work. Bake in the oven until the sausages are cooked through and the vegetables are tender. Serve hot and enjoy!
Cut the red onions into 8 wedges and the peppers into bitesize pieces, place in an oven proof dish with the new potatoes. Drizzle over the olive oil and shake the dish to coat the vegetables, season with salt and pepper then cook in the oven for 30 minutes.
Remove the dish from the oven, stir in the tomato quarters then place the sausages on top of the vegetables and return to the oven and cook for a further 15-18 minutes until the sausages are golden brown.
Remove from the oven and serve.
