Cooking Instructions

Heat the olive oil over a medium heat in a large frying pan, add the meatballs to the pan and cook for 10-15 minutes until well browned all over and cooked through.

Meanwhile Bring a pan of salted water to the boil, add the potatoes and cook for 15-20 minutes until completely soft.

Remove the meatballs from the pan and set aside. Add the butter to the frying pan and heat gently until melted, stir in the flour and cook for 2 minutes until thick. Gradually add the vegetable stock, stirring well between each addition until you have a smooth sauce. Simmer gently for a couple of minutes to thicken then stir in the cream, add a little more stock or cream if the sauce is too thick.

Cook the beans in a pan of boiling water for 5 minutes.

Drain the potatoes well then return to the pan and mash with a potato masher until smooth, beat in the butter and milk and season with salt and pepper

Return the meatballs to the pan and reheat in the sauce for about 5 minutes then sprinkle over the parsley and serve alongside mash potato, green beans and a spoonful of cranberry sauce.
