Mediterranean Traybake
This easy Mediterranean tray bake is packed full of flavour and can be served with crusty bread and a green salad.
Cooking Instructions
Pre-heat oven to 200°C, 180°C fan gas mark 6.
Prep all the vegetables.
Parboil the potatoes for 8-10 minutes and drain.
Place the sausages in a baking tray.
Add the mixed vegetables, potatoes, and garlic.
Drizzle with the oil, gently give a quick shake to ensure the oil covers the vegetables.
Season with salt and pepper.
Roast in the oven for 25-30 minutes.
Remove from the oven and sprinkle over the parsley.
Serve with crusty bread and a green salad.
Tip: *depending on what herbs you have and prefer; you can mix our recipe up! For woody herbs such as rosemary, thyme and sage, the herbs can be cooked with the sausages and vegetable to add flavour whilst cooking. For softer herbs such as parsley, chives, basil, dill tarragon and mint, these can be chopped and added once out of the oven, immediately before serving.

- 300g small potatoes, halved and parboiled
1x red onion, cut into wedges - 2x peppers (red or orange), deseeded and roughly chopped into chunks
- 2x medium courgettes, sliced
- 200g cherry tomatoes, left whole
- 3x cloves of garlic – thinly sliced or left whole with the skin on
- 2 tbsp extra virgin olive oil
- Salt and pepper to season
