Sweet and Sour Chicken

Sweet and Sour Chicken is a classic Chinese dish that is beloved around the world. It’s a combination of both sweet and sour flavours that come together to create a dish that is as delicious as it is unique.

Use Richmond Meat-Free Chicken Pieces cooked in a sweet and sour sauce made with ingredients like pineapple, spring onions and seasoning . The dish is often served with a side of steamed rice and a vegetable like broccoli or carrots. Sweet and sour chicken is a great way to satisfy both your sweet and savoury cravings.

Cooking Instructions

Heat the oil in a large pan and stir in the meat-free chicken pieces, cook over a high heat until golden.

Stir in the jar of sweet and sour sauce and cook for around 5 minutes until nice and sticky.

Heat the rice according to packet instructions.

Serve the sweet and sour chicken alongside the rice and top with the spring onion slices.

Add the tin tomatoes, vegetable stock and carrot and swede to the mince, bring to a simmer and cook for 5 minutes, season to taste with salt and pepper. Spoon into a large rectangular ovenproof dish.

NB – you can add extra vegetables to the dish such as onions and red and green peppers – chop and add to the pan with the chicken pieces. You could also add a few pieces of tinned pineapple chunks too.
